1 pkg. refrigerated sugar cookie dough, softened 1 pkg. 8 0Z. cream cheese, softened 1/2 cup packed brown sugar 1/4 cup creamy peanut butter 1/2 tsp. vanilla flavoring 2 medium Granny Smith apple ground cinnamon 1/4 cup caramel ice cream topping, warmed 1/2 cup peanuts, chopped
Preheat oven to 350F. Place cookie dough in the center of a round baking stone. Roll out dough to 14-inch circle or about 1/4 of an inch thick. Bake 16-18 minutes till lightly browned;cool 10 minutes. Loosen cookie from stone;cool completely. For topping, cream together cream cheese, brown sugar, peanut butter, and vanilla. Spread mixture evenly over cookie. Peel, core and slice apples and arrange evenly over cream cheese mixture, Sprinkle with cinnamon. Drizzle heated caramel topping over apples and sprinkle with chopped peanuts.
