Mock Guacamole Prep: 10 min, plus chilling time.
· 1 lb. frozen baby peas, thawed and drained
· 4 scallions, trimmed and coarsely chopped
· 1/4 cup fat-free sour cream
· 2 Tbs. purchased salsa
· 1 tsp. olive oil
Combine peas and scallions in a food processor. Process until very smooth. Add remaining ingredients and salt and pepper to taste. Transfer to a bowl, cover, and chill until ready to serve.
This recipe serves 12 people. Due to the nature of this recipe, it adjusts the number of servings in multiples of 12 only.
