from Soyfoods: A healthy profile from the Nebraska Soybean Board makes 9 servings, Calories: 125.5, Total Fat: 0.7g, Saturated Fat: 0.1g, Cholesterol: 0, Sodium: 98.7mg, Carbohydrates: 28g, Dietary Fiber: 1.7g, Protein: 2.6g ADA: 2 CHO Ingredients: 3/4 cup all-purpose flour 1/2 tsp. cinnamon 2/3 cup nonfat soy milk 1/4 cup soybean flour 1/2 tsp. nutmeg 2 tsp. baking powder 1/2 cup sugar 1/4 tsp. almond extract 16 ounces canned peaches in light syrup Instructions: Preheat oven to 350 degrees F. In a medium bowl combine flour, soy flour, baking powder, cinnamon, nutmeg and sugar. stir well. Add soy milk and almond extract. Stir just till blended. Gently stir in the well-drained and chopped peaches. Pour batter into an 8-inch square pan which has been coated with non-stick cooking spray. Bake at 350 degrees F for 35 to 40 minutes until a toothpick inserted in the center comes out clean. Cut into 9 squares to serve. Garnish with a nonfat whipped topping or small dip of nonfat vanilla ice cream.
