Hi Allie, Welcome to Nancy's Kitchen Recipe Message Board. I thought you might like to browse through the Google search engine to acquaint yourself with the varieties of cooking apples available. www.google.com/search?sourceid=navclient&q=variety+of+cooking+applesMy choice is generally the Cortland variety for making pie filling and applesauce. Here is my favorite applesauce recipe for the crockpot. CHUNKY APPLESAUCE Cooking time: 8 - 10 hours 8 - 10 large cooking apples 1/2 cup water 1/2 to 1 cup sugar (depending on tartness of apples) 2 slices of lemon OR 1 teaspoon bottled lemon juice 1 teaspoon cinnamon Peel, core, and cut apples into small chunks. Place in slow cooker with water, 1/2 cup sugar, and lemon slices. Cover and cook on Low 8 - 10 hours. When applesauce is cooked, remove lemon slices. Stir in cinnamon and more sugar if desired.
