Baked Mac and Cheese SERVES: 8 1 pound macaroni 1/4 cup margarine 1/4 cup finely chopped onion 2 tablespoons flour 2 cups milk 1 cup grated cheddar cheese 1 cup soft bread crumbs 1/2 teaspoon paprika 1/4 cup grated Parmesan cheese Cook macaroni in unsalted water about 10 minutes or till tender. Drain. Grease a 9X9X2-inch casserole pan; set aside. In a medium saucepan over medium heat, melt half the margarine and sauté onion until tender, about 3 minutes. Stir in flour; cook 1 minute more. Gradually add milk, stirring constantly; cook and stir until slightly thickened. Add cheddar cheese; stir until melted. Stir in cooked macaroni. Transfer to casserole pan. Preheat broiler. Melt remaining margarine in small saucepan over low heat. Stir in soft bread crumbs, paprika and Parmesan cheese; toss lightly. Sprinkle over the macaroni mixture. Place under broiler until lightly browned, about 2 minutes.
