Baked Macaroni with Three Cheeses
2 cups macaroni, cook and drain 1 stick (4 oz) butter 1 medium onion, chopped 1 clove garlic, minced 1/3 cup flour 2 cups milk 1 - 2 TBS Dijon mustard 2 tsp worcestershire sauce 1 cup grated swiss cheese 1 cup grated white cheddar cheese 1 cup grated yellow cheddar cheese 1/2 cup sour cream 2 stalks celery, diced 1 1/2 cup cubed ham 2 TBS chopped parsley
Preheat oven to 375*F. Saute onion and garlic in butter until soft. Stir in flour. whisk in milk, mustard and worcestershire sauce. Bring to a boil. Reduce heat and stir til thickens. Remove from heat. Stir in cheeses, stir to melt. Then stir in celery and ham. Mix sauce into macaroni. Pour into greased 2 1/2 QT casserole. cover with foil tightly. Bake 20 minutes. Uncover and bake 5 minutes longer. Sprinkle with parsley to serve. Serves 6-8.
