Nachos (Corn Chips with Melted Cheese, Chiles and Pinto Beans) 6 - ounces tortilla chips
1/2 - cup cooked pinto beans
1/4 - cup diced green chiles, drained
1 - tablespoon green olives, chopped
1 - tablespoon ripe olives, chopped
1 - cup grated cheddar cheese
1 - cup grated Monterey Jack cheese
1/2 - cup fresh cilantro, chopped
Arrange the tortilla chips on a microwave plate. You want to sprinkle the beans, chiles, olives and cheese over the chips. Cook on high for 3:30 minutes. Remove from microwave, garnish with cilantro. Have side dishes of sour cream and salsa. Makes 8 servings.
