This is in response to Kim's question about mini zucchini breads. I quite often make 4 minis instead of 1 large loaf. I usually cut the time back to about 40 minutes at 350. Or, you can increase the heat to 375-400 and bake for 20 minutes or so. Just be sure to use the toothpick test (insert toothpick in tallest part and if it comes out clean, it's cooked!), to make sure they are cooked all the way through. Muffins can also be baked for 20 minutes at 375-400 degrees. Good Luck!!
