Marie in VA requested a moist stuffing recipe. Here is mine:
Basic Celery Stuffing/Dressing
2 C diced celery, with leaves 2-3 C chicken broth 1/2 cup minced onion 1/2 C butter 4 qts bread cubes (I use a mixture of white and whole wheat bread) 3 eggs, beaten 1 t salt 1 t ground black pepper 1/2 t sage 1 pinch dried thyme
Dry out bread slices several days before making. Melt butter in saucepan. Sauté onion in melted butter until soft, but not brown. Add celery and stir well. Add 2 cups broth. Bring to a boil. Cover and simmer for 10 minutes. Place bread cubes into large mixing bowl. Add eggs, salt, pepper, sage and thyme. Add onion and celery mixture. Combine thoroughly. If still too dry, add more broth. Makes enough to stuff a 10 - 15 lb. turkey. This can also be baked about a half an hour in a casserole (sprayed with vegetable spray). Delicious!
