Hi! I just made two cherry pies and froze them before baking them. When reading up on this, I kept finding advice that said NOT to cut vent slits or brush with the egg wash before freezing because both of those things should be done right before baking... Could somebody tell me why? Will something happen to the filling or crust if I DO cut the slits and brush with egg wash before I freeze the pies? Thank you very much for your help!

Hi there, I have never egg washed or put slits in any pastry products before freezing. The only reason for me doing this is when I go to bake them I then egg wash (and if a fruit pie) sprinkle with caster sugar (slightly finer than granulated) and then put air slits in, because I don't like the thought of the egg wash going through the slits into the contents of the pies.
I'm sure bought frozen fruit pies have been washed and slotted. So...
There maybe specific reasons and I'm sure some of our more experienced bakers will reply soon.
