Gooseberries have just come to the end of their season here in Scotland. I missed my last pick, but the birds had a great feed.
Gooseberry Fool (Serves Six)
1lb green gooseberries, rinsed, topped and tailed 2 oz golden caster sugar 400ml tub ready-made custard 142ml carton whipping cream (whipped into soft peaks)
Put the gooseberries in a large saucepan together with the sugar and 1 tbsp of water put over a low heat, shake the pan as the sugar melts and the juices from the fruit start to run. As soon as the gooseberries turn paler (usually about 4 mins) turn off the heat. Cover the pan and leave for 10 minutes to soften the fruit slowly in the steam. Leave the gooseberries to cool completely, then drain off the juices. Crush the fruit with a potato masher. Pour the custard into a bowl and gently fold in the cream, then stir in the gooseberries and gently still them through. Spoon into serving glasses and serve with your favourite dessert biscuits.
(if you make the fruit before time and have them in the fridge bring them to room temperature before mixing into the custard and cream)
