Cheese Soup
Serves 4 - 6
2 small onions 2 oz butter 2 oz flour 1 pint milk 1 pint white stock or water 1 level tsp salt pinch pepper 6 oz Cheddar Cheese Croutons to garnish
Slice the onions very thinly and cook in the butter for a few minutes, add the flour and cook for another minute. Stir in the milk and stock or water bring to the boil. Season and simmer gently for about 5 minutes. Grate or dice the cheese, toss in the soup and simmer until melted. Don't allow to boil. Serve immediately garnished with croutons.
