This really does give your appetite a boost
Lemon Appetiser
Serves 4
3 - 4 Lemons 1 tbs honey 2 egg whites 4 small ice cubes, crushed
Frosting: a little egg white and a little caster sugar (slightly finer than granulated sugar) brush the rim of the glasses with the egg white then dip in the sugar
Squeeze the juice from the lemons* and mix with the honey. Whisk the egg whites lightly with the lemon juice and honey, then continue to whisk with the crushed ice cube until a very fluffy mix. Instead of whisking by hand, the honey lemon mixture plus the egg whites and ice cubes could be put into a liquidiser, blender or electric mixer and whisked'
To serve put in to the frosted glasses and serve at once.
*To make the juice easier to extract - before squeezing: roll the lemons on your chopping board or place in the microwave for 20 seconds
