Preheat oven to 190oC/375oF (Makes about 30)
7 ozs/200g Self-raising flour 4 ozs/100g caster sugar (slightly finer than granulated) 4 ozs/100g slightly soft butter 1 small egg, beaten Marmalade, strawberry or apricot jam
Put the first 3 items into a food processor and mix together. Add just enough egg to form a stiff dough.
Roll the mixture into balls the size of a walnut and place on a baking tray (no need to line the tray). Flatten each ball slightly and make a dip in the middle of each biscuit with your thumb or the end of a wooden spoon. Drop half a teaspoon of your chosen jam in the centre.
Bake for 10-15 minutes until just golden. Cool on a wire rack.
