Scotch Pancakes (Drop Scones) makes 8 - 12 portions
4 oz plain flour 2 tsps baking powder pinch salt 1 oz sugar 1 egg 1/4 pint milk 1 oz margarine, melted (this is optional, but helps to keep the pancakes moist)
Sieve together dry ingredients. Beat in first the egg, then the milk and stir in the melted margarine Grease and warm griddle, hot plate or frying pan. To test if the heat is correct drop a tsp of the mixture on this pan, if it goes golden brown within 1 minute it is hot enough. Drop dst spoonfuls on the mixture into the pan, cook for 2 minutes, then turn over and cook for a further 2 minutes. To test if cooked, press firmly with the back of a knife, if no batter comes from the sides and the scones feel firm.
Cool before serving with butter, butter and jam or top with butter and serve with a thick apple puree.
