Ten-minute Pasta
Serves 4
12 oz/350g Penne 1 carrot, roughly chopped 1/2 small onion, roughly chopped 1/2 celery stick, roughly chopped 6 - 8 ripe plum tomatoes, roughly chopped 1 tsp dried oregano 1 tsp red pesto 2 Tbsp raspberry vinegar grated Parmesan and basil leaves, to serve
Boil the pasta. Meanwhile, add all other ingredients, apart from the Parmesan and basil, to a food processor, then whizz together until you have a smooth paste.
Tip the mixture into a saucepan, bring to the boil, then reduce the heat to a simmer and leave the sauce to cook for 5 minutes.
Drain the pasta, toss with the tomato sauce, then serve with the Parmesan and basil
