Grilled Tequila Lime Shrimp 1 pound uncooked large shrimp, peeled and deveined 1/2 yellow pepper(s), cut into 1/2-inch pieces 6 green onions, sliced into 1 1/2-inch pieces 16 cherry tomatoes, you may substitute pear tomatoes 8 wooden skewers 1 cup Lawry’s® Tequila Lime Marinade with Lime Juice 1 lime(s), sliced into 8 wedges 1. Thread shrimp, pepper, onion and tomatoes onto skewers, dividing up ingredients equally. Baste heavily and frequently with Tequila Lime Marinade while grilling. Cook until shrimp is pink, do not overcook. Serve each skewer with a wedge of lime. 2. Hint: Soak each skewer in water for at least 30 minutes before using to reduce burning. 3. Variations: Serve on pita bread with shredded lettuce and lime juice squeezed over the top. Or wrap in a flour tortilla as a sandwich. Both ideas are great for picnics and parties! Serves: 4
