Salmon in Foil
Place a 5-6oz salmon steak or filet in the center of a square of foil. (make sure there is enough foil to make a packet)
Drizzle with 1 tsp of lemon juice, sprinkle with 1/2 tsp dill weed, 1/2 tsp fresh ground pepper, and 1/4 tsp salt.
Place 1 thin slice of onion on top, then either add a Tbs. of salsa, or a few cherry tomatoes halved with a few pieces of zucchini on top of the onoin. Fold the packet up and bake in a 350* oven for 20 -25 mins.
This is a perfect main course for company, as well as a perfect meal for when everyones scheduals are off. You can make the packets up an hour or two in advance and make them as needed. (any more than two hours, leave out salsa and lemon, or the fish will be partially cooked..just add them right before cooking)
