Quick Buttermilk Rolls
1 package active dry yeast 2 tablespoons warm water 3/4 cup buttermilk -- heated to lukewarm 2 tablespoons sugar 1/4 cup melted shortening or vegetable oil 1/2 teaspoon salt 2 1/4 cups all-purpose flour 1/4 teaspoon baking soda 2 tablespoons unsalted butter
Combine yeast and water and set aside to proof. Mix the warmed buttermilk, sugar, shortening, and salt. sift flour with the baking soda into a large bowl. Stir yeast into the buttermilk mixture and pour onto the flour. Stir to mix well and allow to rest 10 minutes covered with a tea towel. Roll out to 1/2 inch thick and form into desired shapes. Preheat oven to 425F degrees. Melt butter in a baking pan and place rolls in, turning to coat the tops. Allow to rise 30 minutes. Bake until golden, about 10 to 12 minutes. Makes about 2 dozen.
