Low Fat Apple-Cinnamon Coffee Cake
Makes: 1 cake (8 slices)
1 cup unbleached flour 1/2 cup whole wheat flour 1/2 cup sugar 1 teaspoon baking soda 3 teaspoons ground cinnamon 1/2 cup apple juice 1/4 cup non/lowfat sour cream 1 tablespoon fat-free egg substitute or 1 egg white 4 apples, thinly sliced TOPPING
2 tablespoons brown sugar 2 tablespoons toasted wheat germ
To make the topping, combine the brown sugar and wheat germ in a bowl, and stir well. Set aside. Combine the two flours, sugar, baking soda, and cinnamon in a bowl and stir well. Stir in the apple juice, sour cream, egg substitute or egg white, and apples. Coat a pan (9-inch round) with nonstick cooking spray (nonfat), and pour the batter in the pan. Sprinkle the topping over the batter, and bake at 350 degrees F for 30-35 minutes. Allow the cake to cool for 15-20 minutes. Nutritional Information:
