1 c. Cranberries 7 T. packed brown sugar divided 1 1/2 t. corn starch 1 can (8 oz.) crushed pineapple drained
3/4 c. flour 3/4 c. quick cooking oats 1/4 t. ginger 1/4 t. cinnamon 3 T. cold diced butter 1 egg white slightly beaten 14 pecan halves chopped
Spray an 8 inch baking pan with cooking spray. Preheat oven to 350 degreese.
in a sauce pan mix cranberries, 3 T. of the brown sugar,corn starch and pineapple. Bring to a boil over med. heat. Cover and reduce heat and simmer for 12 min. or until the skins splits and the mixture thickens stir now and then. Set aside. Combine oats, 4T. brown sugarand spices. Cut in butter until you have a course meal. Reserve 1/2 Cup set aside. Add egg white to oat mixture .Press this into the bottom of the pan and bake for 10 min. Spread cranberry mixture over hot crust. Combine the reserved oat micture with the chopped pecans and sprinkle over top. Bake for 27 min.or until browned. Cool completely before cutting into 16 bars Yield 16 bars at 2 1/2 points each
