Frosted Carrot Cookies
3/4 cup granulated sugar 1 cup butter 2 eggs 1 cup cooked carrots, mashed 2-1/2 cups all-purpose flour 1/2 teaspoon salt 3/4 teaspoon baking soda 2 teaspoons baking powder 1-1/2 teaspoons pure vanilla extract
Preheat oven to 350 degrees F. Cream together sugar, butter and eggs. Add mashed carrots. Add dry ingredients and vanilla. Mix until well blended. Drop by teaspoonfuls onto un-greased cookie sheets. Bake in 350 degrees F oven for 15 minutes. Allow cookies to cool and frost. Makes 5 dozen 1-1/2 inch cookies.
frosting:
3 tablespoons butter, softened 2 tablespoons orange juice 1 tablespoon lemon juice powdered sugar
Combine first three ingredients with enough powdered sugar to make frosting of a spreadable consistency. Stir until well-blended.
