Cajun Scallops w/ Chili Pepper Mayo

Cajun Scallops w/ Chili Pepper Mayo
1 lb large scallops
1/2 tsp each oregano,thyme,basil,cayenne,black pepper,onion powder, garlic powder
1 tsp each paprika,salt,chili powder
1 1/2 c flour
3/4 c milk
2 c safflower oil
Wash & pat dry scallops.
Dip scallops in milk, then dust with flour/spices mixture. Fry for 3-4 min, til golden brown.
Serve immed. with mayo.
Mayo:
2 egg yolks
1 c safflower oil
1 tbsp lemon juice
1/4 tsp salt
1 tbsp chili powder
3 drops tabasco sauce
Place the egg yolks in blender on low, add oil until thick sauce.
Add lemon juice,salt,chili powder & tabasco.
Pour into a bowl & serve with scallops.
