Ingredients: 1/2 lb. bacon, chopped, or sausage, crumbled 1 med. onion, chopped 2 lb. bag frozen hash browns 1 sm. can diced green chilies 1 sm. jar salsa or picante sauce 12 eggs, lightly beaten 1/2 lb. grate cheddar cheese
Directions: Cook bacon and onions in a 12-inch Dutch oven over medium-high heat until bacon is brown and onions are clear. Add hash brown potatoes and cover; cook 15-20 minutes or until potatoes brown, stirring occasionally. Stir in chilies and salsa. Pour beaten eggs over potatoes. Cover and cook until eggs are set, 10-15 minutes. Sprinkle cheese over eggs, cover and continue heating until cheese melts.
