Corn Dog Casserole
2 cups finely minced celery 2 Tbsp. butter 1-1/2 cups sliced green onions 1-1/2 pounds of hot dogs (I use Ball Park Beef ) 2 eggs 1-1/2 cups milk 2 tsp. sage 1/4 tsp. black pepper 1/4 tsp. salt 2-8.5 oz. Jiffy muffin mix 8 oz. sharp Cheddar Cheese shredded
Sauté celery in butter for 5 minutes. Add onions and continue cooking 2 minutes. Dump skillet ingredients into a large bowl. Cut hot dogs in half lengthwise, then chop into bite size pieces. Sauté dogs in skillet; turning to brown. Add to bowl. Reserve 1 cup of hot dogs & veggies in a small bowl. Slightly beat eggs & milk together. Add egg mix and next 4 ingredients to bowl. Add 1-1/2 cups of cheese to bowl also. Mix all ingredients well. Spray 13x9 Pyrex dish or foil pan. Pour in casserole. Top with reserve hot dogs and cheese. Bake uncovered at 400* for 40-45 minutes

Ritzy Chicken Casserole 2 sleeves Ritz crackers 1 can cream of chicken soup, or cream of mushroom 1 carton sour cream, (8 ounces) 1/2 to 1 cup chicken broth 4 to 6 boneless chicken breasts, cooked 4 ounces margarine, melted Crumble one sleeve of Ritz crackers in the bottom of a 2 to 2 1/2-quart casserole dish. Drizzle 1/2 of the melted margarine over the crackers. Mix chicken with soup, sour cream, and broth. Pour over crackers. Crush the remaining sleeve of crackers over the chicken mixture. Drizzle the remaining melted margarine over the crackers. Bake at 300 degrees for 30 to 45 minutes. Serves 6.

Dorito Chicken and Cheese Casserole 3 cups cooked chicken, chopped (I used a rotisserie chicken) 1 cup sour cream 1 can cream of chicken soup 1/4 cup minced onion 2 cups cheddar cheese, shredded 1/2 tsp. salt 1/2 tsp. pepper 1/2 tsp. garlic powder 1 medium sized bag of nacho cheese Doritos, crushed Preheat oven to 350 degrees. Lightly spray a 9x13 pan with cooking spray. Spread the bottom of the pan with half of the Doritos . Reserve one cup of cheese. Mix together remaining ingredients in a large bow. Pour chicken mixture over the Doritos. Top casserole with the remaining cheese and Doritos. Bake 30 minutes or until bubbly.

TAMALE PIE 1 onion, chopped 1 clove garlic, minced 1 1/2 lb. ground beef 1 can tomatoes (14 1/4 oz.) 1 can (16 oz.) whole kernel corn, drained 2-3 tsp. chili powder 2 tsp. salt 1 can sliced ripe olives (4 1/2 oz.) 1 1/2 c. grated American cheese TOPPING: 1 c. corn meal 1 c. milk 2 eggs Brown beef in a skillet. Add onions and garlic. Cook until tender. Drain fat. Add tomatoes, corn and seasonings. Cover and simmer 15 minutes. Pour into 8 x 12 x 2 inch pan. Top with sliced olives. Spread mixture of corn meal, eggs and milk over filling, slowly and carefully. Sprinkle with cheese. Bake at 350 degrees for 45 minutes. Serves 6.

Baked Spaghetti In Garlic Bread 1 Loaf Rhodes Bread Dough or 12 Rhodes Dinner Rolls, thawed to room temperature 6 oz spaghetti, cooked 1 cup thick spaghetti sauce 8 oz mozzarella cheese, cut into 1/2 –inch cubes 1 egg white Parmesan cheese Parsley flakes Garlic powder Optional- 1/2 lb cooked sausage or burger Spray counter lightly with non-stick cooking spray (or use parchment paper). Roll loaf or combined dinner rolls into a 12x16-inch rectangle. Cover with plastic wrap and let rest for 10-15 minutes. Cook spaghetti according to package instructions. Drain and let cool slightly. Remove wrap from dough. Place spaghetti lengthwise in a 4-inch strip down the center of dough. Top with sauce and cheese cubes. (Or, mix spaghetti and sauce together and added cooked meat) Make cuts 1 ½-inches apart on long sides of dough to within ½-inch of filling. Begin braid by folding top and bottom strips toward filling. Then braid strips left over right, right over left. Finish by pulling last strip over and tucking under braid. Lift braid with both hands and place on large sprayed baking sheet. (or transfer parchment paper to baking sheet). Brush with egg white and sprinkle with Parmesan cheese and parsley and garlic powder). Bake at 350 for 30-35 minutes or until golden brown. Cool slightly and slice to serve.
