Ingredients:
1 medium pumpkin
5 tablespoons butter
salt
1/3 cup diced onions
1-½ cups bread crumbs
2¼ cups chicken broth
½ teaspoon sage
½ teaspoon nutmeg
½ teaspoon pepper
½ cup heavy cream
1 handful parsley
½ cup diced Swiss cheese
Preheat oven to 400#730;. Cut off and save the top of the pumpkin. Clean out the seeds.
Rub the inside of the pumpkin with 1-tablespoon butter. Salt the inside of the pumpkin.
Sauté the onion in 4 tablespoons butter. Put onions, chicken broth, sage, nutmeg, pepper, cream,
and parsley into the pumpkin. Place the top back on the pumpkin. Put into the oven and bake
at 400#730; for 1-½ hours and occasionally scraping inside of pumpkin into broth. Reduce heat to 350#730; and add Swiss cheese. Bake for an additional 30 minutes. Serve with croutons.
