EGG NOG ~ [diabetic friendly] ingredients:- 4 x eggs separated 90gms x caster sugar [or sweetener] 315ml. x hot milk [full or low-fat] 125ml. bourbon [or rum, brandy, coffee liquer, or whatever you like] 125ml. cream. [reduced fat] nutmeg method:- beat the yolks and the caster sugar in a heatproof bowl, until light and fluffy... add the hot milk and stir to combine... bring a large saucepan of water to the boil and place heatproof bowl over the boiling water turn down to simmer... stir milk and egg mix gently for 5 to 10 mins with a wooden spoon until mixture thickens enough to thinly coat the back of the spoon.. allow mix to cool 4 to 24 hours.. add bourbon and mix through... whip egg whites until soft peaks form... whip cream until soft peaks form.. fold half the cream and half the egg mixture into into to the cooled milk mixture.. and then the other half... serve in small glasses with a little nutmeg on top..
