6 potatoes, cubed 2 onions, finely chopped 1 carrot, finely chopped 2 stalks celery, chopped fine 5 cubes of chicken bullion 1 tsp. parsley 2 quarts water 1 Tbsp. salt 1 tsp. pepper 1/2 cup butter 1 can evaporated milk (save for later)
Combine all ingredients except for the milk, cook one hour. Then in a bowl combine and mix:
2 cups flour 1 egg 1 cup milk 1 tsp. salt
Drop flour, egg, milk and salt mixture by tsp. into boiling soup. Cook for 45 minutes then take off heat, add evaporated milk, and serve. The subscriber that sent this recipe to us suggested that you could add about 1 to 1 1/2 cups finely chopped ham which would really make this a meal in itself. The subscriber also explained that you could use fried bacon in place of the ham.
The Skinny: Use low fat evaporated milk, egg substitute and low fat milk.
