Servings: 6 servings.
What you need:
Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/4 pounds sweet potato -- diced, peeled 3 carrots -- chopped 1 large celery stalk -- chopped 1 bay leaf 6 cups water 2 tablespoons lemon juice 1 teaspoon hungarian sweet paprika
Ready, set, cook!
1. Put all vegetables with the bay leaf in a soup pot. Add water & bring to a boil.
2. Simmer for about one hour. Stir occasionally.
3. Just befroe serving, add lemon juice & paprika. Remove bay leaf.
Note: if you want in more creamy, you can take 1/2 the soup out and blend it in a blender and put it back in the with the rest.
