CHRISTMAS CHOWDER (6-8 servings) 1 lb bulk, lean Italian pork sausage (hot or mild 1 C chopped onion 1 C chopped celery 2 or more cloves minced garlic 5 C water 4 C frozen hash brown potatoes thawed 14 & 1/2 oz can Italian diced tomatoes with garlic, oregano and basil 4 tsp chicken bouillon with garlic 2.75 oz package dry country style gravy mix 2 C milk 1 C finely shredded Cheddar cheese 10 oz frozen spinach, drained. 1. In large pot, cook and stir sausage, onion, celery and garlic over medium heat until sausage is no longer pink and veggies are tender. 2. Stir in water, potatoes, tomatoes and bouillon. Heat to boiling over high heat. Reduce heat to a simmer, stirring occasionally for 10 min. or until potatoes are tender. Return to boiling. 3. In a 4 C glass measure, dissolve gravy mix in milk. Stir into boiling mixture. Cook and stir until thickened. Stir in cheese and spinach. Reduce heat to a simmer for 2 min. or until cheese is melted and spinach warmed.
