This is really good anytime but is really good on a cold rainy day outside. It warms you up on the inside.
Jambalaya Soup 1 cup onion 1 cup chopped celery 1 cup chopped bell pepper 3 cloves minced garlic 1 lb smoked sausage 2 Chicken Breasts 1 can diced tomatoes 1 can diced tomatoes with chilies 1/2 tsp cayenne pepper 3 bay leaves 2/3 cups brown rice 1 cup chicken broth 1/2 lb sliced okra 1 lb crawfish or shrimp
In a large skillet brown sliced sausage with onion, bell pepper, celery, and garlic.
In a large pot bring chicken breasts, chicken broth, tomatoes, garlic, herbs, and rice to a boil. Boil until chicken is done. Remove chicken and cut into small cubes. Return chicken to pot and add sausage mixture, okra, and crawfish to last 10 minutes of cooking. You may also want to add 1 tbsp of crab boil to this while cooking.
