Cream of Potato Soup Prep: 15 min, Cook: 35 min. 2 tsp. olive oil 1 medium onion, chopped 2-1/2 medium potatoes, peeled, chopped 3-1/4 cups chicken stock 1/2 cup plus 2 Tbs. cream Heat oil in a heavy nonstick pan over medium-high heat. Add onion and cook 10 minutes, stirring, or until soft. Add potatoes and stock. Lower heat and simmer, uncovered, 20 minutes, or until potatoes are tender. Transfer mixture in batches to a blender or processor and process until smooth. Return to pan and add cream. Stir over medium heat 5 minutes, or until heated through.
