Pickwick and Frolic's Mumbo Jumbo Ya-Ya Yield 5 gal.
Portion size 8 oz.
Number portion 80
Ingredients:
3 cup flour
2 qt. yellow onion diced
2 qt. green bell pepper red, yellow diced
3 cups olive oil
3 qt. celery diced
5 lbs. andouiolle sausage diced
5 lbs. rotisserie chicken no bones, stock
2 gal. chicken boullion stock
3 ea. bay leaves
2 tsp. cayenne pepper
2 cans in juice clams
4 cans clam juice
2 cups parsley chopped
4 lbs. okra sliced, bias
1/4 cup file powder
1 qt. green onion sliced bias
2 lbs. plum tomatoes oven roasted
1 qt. yellow bell pepper diced
1 qt. green bell pepper diced
1 qt. red bell pepper diced
Procedure:
1. Combine oil and flour in skillet with medium heat, stirring slowly and constantly for 20-25 minutes, make a dark roux, the color of chocolate.
2. Add the vegetables and continue to cook for 5 minutes while stirring.
3. Add the chicken, sausage, cayenne pepper, bay leaves, clams and clam juice and continue to cook at a low simmer for 30 minutes.
4. Add the remaining seasonings and vegetables and continue cooking for an additional 30 minutes.
5. Remove the bay leaves.
6. Gumbo can be served with rice.
