10 oz lean boneless beef sirloin 1/4 t salt 2 t reduced-calorie tub margarine 2 T minced shallots 1/4 c red wine vinegar 1/4 c low-sodium beef broth 2 t Worcestershire sauce 1/4 t freshly ground black pepper 1 t arrowroot, dissolved in 1 T water
Spray rack in broiler pan with nonstick cooking spray. Preheat broiler. Sprinkle beef on all sides with salt. Place beef onto prepared rack; broil, turning once, 14 minutes, until cooked through. Meanwhile, to prepare shallot sauce, in small saucepan, melt margarine; add shallots. Cook over medium-high heat, stirring frequently, 2-3 minutes, until softened. Stir in vinegar, broth, Worcestershire sauce and pepper; bring liquid to a boil. Reduce heat to low; simmer, stirring frequently, 2 minutes. With wire whisk, stir in dissolved arrowroot; continuing to stir, simmer 30 seconds, until mixture is thickened. Transfer beef to cutting board; slice thinly. Arrange beef slices on serving platter; top with shallot sauce. Makes 4 servings.
