Nancy I would like to take a moment to whish you and everyone at all easy cookin a safe and wonderful Christmas. Also, Here are some Recipes I learned While we were living in New Mexico A sweet Mexican Sister Kat, taught me how to make these. I hope you will try some out and enjoy. God Bless You Nancy and your family Bulk Chorizo Sausage Filling (Relleno Suelto De Chorizo) This is a popular filling for tortilla dishes. 1 large onion, finely chopped 1 pound of ground beef ½ pound ground pork butt 2 teaspoons each chile powder and crumbled oregano ½ teaspoon ground cumin 1/4 teaspoon cinnamon 1 teaspoon salt ½ teaspoon liquid hot pepper seasoning (optional) 5 Tablespoons vinegar 1- ½ cups canned Enchilada sauce Combine the onion, ground beef, ground pork, chile powder, oregano, cumin, cinnamon, salt, hot-pepper seasoning, and vinegar. To prepare this mixture as a filling, lightly brown it in a wide frying pan over medium-high heat, breaking the meat apart as it cooks. Add Enchilada sauce and boil rapidly until liquid is gone.
