At this time of the year, this recipe could come in handy! Left Over Turkey Enchiladas INGREDIENTS 1 package flour tortillas 2 cups chopped leftover turkey 1 large can sliced black olives 1 large can enchilada sauce 2 large onions > Maui sweet are nice! 2 cups grated cheddar cheese Directions: Warm enchilada sauce in a large skillet. Dip a tortilla in the sauce and place in a shallow pan. (Size of pan is determined by how many enchiladas you need to make, but spray it first with PAM.) Stuff it with the turkey, olives, onions, cheese, and 3 tbsp. of sauce. Roll-up and continue with the next tortilla. Don't overstuff or it will be difficult to roll. Continue until all of the tortillas have been stuffed. Spread the remaining sauce over the rolled enchiladas. Sprinkle cheese over the top. Cover with foil and bake at 375 degrees for 30 minutes.
