Black Bean And Corn Salsa
1 14-oz can black beans rinsed and drained 1 1/2 cups corn, frozen and thawed or fresh corn, lightly blanched 1/2 cup chopped purple onion 1 clove garlic 1/4 cup fresh cilantro, chopped 3 tablespoons fresh lime juice 2 teaspoons sugar 1/2 teaspoon salt 1 to 2 tablespoons, chopped red or green jalapeño <br>1/4 teaspoon ground red pepper
1.Mix all ingredients together stirring well, cover and chill or serve at room temperature.
Yield approximately 3 cups or 6 ½ cup servings each at approximately 58 calories; 0.2 gram fat; 15.2 grams carbohydrate; 2.8 grams fiber; 2.9 grams protein and 24 milligrams sodium
