Beefy Rice Skillet
1 pound ground beef 1/4 onion, minced 1 tablespoon chili powder 1 can (10 3/4 oz.) condensed beefy mushroom soup 1/4 cup water 1 can -14 1/2 oz. tomatoes--undrained, cut-up 3/4 cup uncooked instant rice 1/2 cup shredded Cheddar cheese Coarsely crumbled tortilla chips
Directions: In a large skillet, brown ground beef; drain. Stir in chili powder, soup, water, and tomatoes. Heat to a boil; reduce heat to low. Cover and cook 10 minutes, stirring occasionally. Stir in rice. Cover and remove from heat. Let stand 5 minutes. Uncover; top with cheese and tortilla chips. Serves 4.
