One Pan Cheesy Chicken & Rice Dinner
1 Tbs. oil 4 small boneless chicken breasts halves (about 1 lb) 1 Can (14 1/2 oz) chicken broth or 1 3/4 C water 2 Cups white rice, uncooked 2 Cups broccoli flowerets (fresh or frozen, thawed) 1/4 cup finely minced onions, optional to your taste 3/4 lb (12 oz) velveeta cheese, cut up *salt and pepper to your taste
Directions: Heat oil in large skillet on medium high. Add chicken; cover. Cook 4 minutes on each side or until cooked through. Remove chicken from skillet. Add broth or water to skillet; stir. Bring to boil. Stir in rice, broccoli, and velveeta. Top with chicken; cover. Cook on low heat 5 mintues. Carefully stir until cheese is melted.
