Swamp Surprise Bubblin' food.
1 tablespoon shortening 1 pound ground beef 1 medium onion, chopped 1 bell pepper, chopped 1/2 cup water 1 17-ounce can whole kernel corn 1 20-ounce can kidney beans 1 pound tomatoes (fresh or canned) 1 teaspoon chili powder 3/4 teaspoon salt
Melt the shortening in a heavy pot. Add the beef, onion, and bell pepper, and cook until the meat is browned and the onion and pepper are tender. Stir the mixture occasionally.
Add the water, corn, beans, tomatoes, chili powder, and salt. Bring the soup to a boil.Reduce the heat, cover, and simmer for 30 minutes. Serve with hot cornbread. Yields 6 to 8 servings.
