Pop-Up Pizza Casserole Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 pounds ground beef 1 cup chopped green peppers 1 cup chopped onion 1 clove garlic -- minced 1 dash salt 1/8 teaspoon Tabasco sauce 1 envelope dry spaghetti sauce mix 1/2 teaspoon ground oregano 1/2 cup water 15 ounces tomato sauce 8 ounces Mozzarella cheese -- shredded
Batter: 1 tablespoon oil 1 cup all-purpose flour 1/2 cup grated Parmesan cheese 1 cup milk 2 eggs 1/2 teaspoon salt
Preheat oven to 400 F.
In a large skillet, brown ground beef; drain off all fat. Stir in next 9 ingredients; simmer 10 minutes, stirring occasionally.
In a small bowl, combine milk, oil and eggs; beat 1 minute at medium speed. Lightly spoon in flour and salt; beat 2 minutes at medium speed or til smooth. Pour hot meat mixture into an ungreased 9x13-inch baking dish. Top with Mozzarella cheese, covering filling completely. Pour popover batter over all and sprinkle with Parmesan cheese.
Bake at 400 F. for 25-30 minutes or until puffed and deep golden brown. Serve immediately, cutting into squares to serve.

Popover Pizza
12 ounces ground meat 1 medium onion 1 tablespoon butter 1 - 15 ounce jar spaghetti sauce 1/2 teaspoon Italian seasoning 1 - 6 ounce package mozzarella cheese slices 2 eggs 1 cup milk 1 tablespoon oil 1 cup flour 1/2 teaspoon salt 1/4 cup Parmesan cheese
Preheat oven to 400.
Saute meat, onion and butter until tender, not brown. Drain. Stir sauce and seasoning into meat mixture.
Pour meat mixture into a 9 x 13 inch pan. Place mozzarella on top; set aside.
In small bowl, combine eggs, milk and oil. Add flour and salt and beat until smooth.
Pour batter over meat mixture and sprinkle with Parmesan cheese.
Bake for 30 minutes.
