Spinach Casserole
1 pkg. Jiffy Corn Muffin Mix 1 pkg. frozen chopped spinach 2 cup chopped onion 1 tbs. butter 2 beaten eggs 1 cup sour cream Swiss Cheese optional
Cream Sauce
1/4 cup butter 1/4 cup flour 3/4 cup milk
Preheat oven to 350 °. Grease 1 1/2 quart casserole. Melt butter in saucepan over low heat. Blend in flour. Cook, stirring constantly, until mixture is smooth. Remove from heat, add milk gradually. Heat to boiling, stirring constantly. Boil 1 minute. Set aside. Cook and drain spinach.
Set aside. Saute onion in 1 tbs. butter. Mix spinach with onion. Set aside. Combine eggs, sour cream and Corn Muffin Mix. Blend well. Add spinach mixture and cream sauce. Pour into casserole and bake for 45 minutes. Sprinkle Swiss Cheese on top. Return to oven until cheese is melted. Makes 12 servings.
