My Grandma used to make something she called Scalloped Corn? (I think it has sour cream in it?) Just wondering is anyone has a recipe? I make this concoction I call corn casserole, it's good but does not even come close to how I "remember" her's. (I'll share anyway) Thanks in advance for any help. ;D
Preheat 450
1 can whole corn, drained 1 can cream style corn 1 box corn muffin mix, follow instructions on box pinch or two, sugar
Follow direction on box of corn muffin mix, add drained & cream style corn, sugar. Mix well, BAKE. Usually takes about 45-60 minutes to cook. Let stand 5 minutes to set up.

Hi bravescj10, I do know that www.allrecipes.com has lots of scalloped corn recipes. I go to that site a couple of times per week. Perhaps if you check that one out you would find what you are looking for! I remember my Mom making it when we were younger and she didn't use corn bread in it. I will have to look for her recipe and will post it! Good luck! Chris

Here's one I found! Chris Old-Fashioned Scalloped Corn Delicious country-style creamed corn casserole, a family favorite! Prep Time: approx. 10 Minutes. Cook Time: approx. 40 Minutes. Ready in: approx. 50 Minutes. Makes 10 servings. Printed from Allrecipes, Submitted by Cali 3 (15 ounce) cans creamed corn 2 eggs 1 cup crushed saltine crackers 1/2 cup butter 1/2 teaspoon paprika 1/4 teaspoon ground black pepper Directions: 1 Preheat oven to 350 degrees F (175 degrees C). Butter one 8x11x2 inch casserole dish. 2 In a medium sized mixing bowl, combine the creamed corn, eggs, 1/4 cup of the melted butter and 1/2 of the cracker crumbs. Pour mixture in into the prepared dish. 3 In a small bowl, mix the remaining melted butter, cracker crumbs, paprika and pepper. Sprinkle crumb topping over the casserole. 4 Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, until topping browns slightly and corn is bubbly around the edges.

1 Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart casserole dish. 2 In a medium bowl, mix together the whole kernel corn, cream style corn, margarine, sour cream, and corn bread mix. Pour into the prepared casserole dish. 3 Bake for 45 minutes in the preheated oven, or until a knife inserted in the center comes out clean.

Old Fashioned Scalloped Corn This is similar to the one my mom makes except she don't use 1/2 cup butter 1/2 teaspoon paprika 1/4 teaspoon ground black pepper She adds sugar to taste and about 1 tbls. butter and used only 2 cans of cream corn She Baked it as the one above called Old-Fashioned Scalloped Corn Ok let me write this down if I can 2 - 15 oz. cans cream style corn 2 eggs 1/4 cup onion chopped 1 Tablespoon of butter to grease the baking dish Sugar to taste 1 cup crushed saltines Mix all together in bowl pour into buttered baking dish Bake in preheated 350 degrees oven for 30 to 40 minutes, until topping browns slightly and corn is bubbly around the edges.
