Zucchini Casserole 3 Tbsp butter 1 Tbsp brown sugar 3 ripe tomatoes thickly sliced zucchini 3 Tbsp flour 1 tsp salt 1 large onion Topping: Grated sharp cheese Bread crumbs (fresh) Butter Cook together in a saucepan the butter, flour (mix in), and the brown sugar, salt, chopped tomatoes, and the chopped onion. The mixture should be cooked over medium to low heat until it makes a juicy sauce. Slice enough zucchini to cover the bottom of a shallow, buttered 9 x 13 pan. Cover very well, but do not overfill. The sliced zucchini should not be piled up nor overflow. Pour cooked sauce over the zucchini in the dish. Cover the top with grated sharp cheese. Sprinkle fresh bread crumbs over the top. Dot with butter. Bake at 350?a for 1 hour. Jay
