C R U N C H Y TURKEY C A S S E R O L E
Ingredients: 2 to 3 cups cooked turkey, chopped (or chicken) 1/2 cup chopped celery 1/2 cup low-calorie mayonnaise 1/2 cup sour cream 1 egg 1 can water chestnuts, drained and diced 2 cups cooked rice 2 tablespoon chopped onion 1 can cream of chicken soup, undiluted 1/2 teaspoon salt 1/2 teaspoon pepper
Preparation: Preheat oven to 350 degrees. Lightly grease 2-quart casserole. Mix all ingredients together and put in casserole. Bake in preheated oven for 25 to 30 minutes, until bubbly and hot. Then add topping, below, and bake another 5 to 10 minutes.
Topping
Sprinkle with 1 cup crushed potato chips or crushed corn flakes. Jay
