Makes 8 servings
1 lb ground beef 1 6-oz can tomato paste 1 medium onion, chopped 1/2 tsp salt 1 clove garlic, finely chopped 1 7-oz pkg pasta shells, cooked 2 Tb salad oil 1 c shredded cheese 1 10-oz pkg spinach, chopped 1/2 c soft bread crumbs 1 1-lb can spaghetti sauce with mushrooms 2 eggs, well-beaten 1 8-oz can tomato sauce 1/4 c salad oil
Brown beef, onion and garlic in 2 Tb salad oil. Cook spinach according to package directions. Drain and reserve the liquid. Add enough water to liquid to make 1 cup. Combine the spinach liquid, the spaghetti sauce, tomato paste and salt, then stir into meat mixture. Combine the spinach with macaroni, cheese, bread crumbs, eggs and 1/4 cup salad oil. Spread the spinach mixture in a 13x9x2" baking dish. Top with meat mixture. Bake at 350F fir 30 minutes or until very hot. Let stand five to ten minutes before serving.
