Texas Daze (Beef and Cheese Casserole) 1 pound ground beef 2 cans (8 ounces each) tomato sauce 1/2 teaspoon oregano Salt 8 ounces egg noodles (they call them wide, but they look regular to me - you don't want to use the extra wide noodles) 1 cup cottage cheese 8 ounces cream cheese 1/8 teaspoon pepper 3 green onions, chopped 1/4 cup dairy sour cream Cook beef in skillet until meat loses its red color, breaking up with fork. Drain off fat. Add tomato sauce and oregano and heat. Bring 4 cups water and 1 tablespoon salt to boil in large saucepan. Add noodles and bring to full boil. Boil 2 minutes, stirring. Cover and let stand 10 minutes. Drain and rinse in hot water. Put half in bottom of shallow (lightly buttered) baking dish. Mix 1/2 teaspoon salt, cheeses, pepper. onion and sour cream. Spread on noodles. Add remaining noodles. Pour meat mixture over top. Bake in moderate oven (350*F.) about 30 minutes. Makes 6 servings. Enjoy, -Shortcake
