3 cups coarsely chopped or grated zucchini, drained 3 eggs, beaten 1/2 cup sweet onion, finely chopped 2 cloves garlic, minced 1/2 cup bread crumbs 1 tsp. fresh dill, chopped 1 tsp. fresh chives, chopped 2 Tbsp. olive oil 1 cup grated Parmesan cheese Salt and pepper to taste
Combine zucchini, eggs, onion, garlic, bread crumbs, dill, chives, olive oil, 1/2 cup of the Parmesan cheese and salt and pepper. Mix well and place in a 13 x 9 inch baking dish coated lightly with non-stick spray. Bake in a preheated 350 degree oven for 30 minutes or until lightly browned. Sprinkle remaining 1/2 cup of Parmesan cheese on top of casserole about 5 minutes before removing from oven.
The Skinny: Use your favorite eggs substitute.
