Since I posted the Dillard House Squash Casserole recipe, it has been one of the most searched for subjects on my blog. And several people have asked for the cabbage casserole recipe. When I went to Virginia last weekend, I copied the recipe from my mom's Dillard House cookbook. So by popular request, here it is:
1 large head cabbage 1 tsp salt 1/2 stick margarine 3 cups basic white sauce 2 cups grated cheddar cheese 1 1/2 cups buttered bread crumbs
1. Shred cabbage. Cook 5-8 minutes in boiling water with 1 tsp salt. Don't overcook. Cabbage should remain crisp. Drain well. Layer cabbage in buttered 2 quart casserole dish: cabbage, enough sauce to cover, second layer of cabbage, remaining sauce, then cheese. Top with buttered crumbs. Bake in preheated oven at 300 degrees for 15-20 minutes.
2. Basic White Sauce cup margarine 3 tablespoons all-purpose flour salt and pepper 1 quart milk
3. Melt margarine in a sauce pot. Add flour, salt, and pepper. Add milk and cook until thick, stirring constantly. Yield: 8-10 servings.
