I will be posting some casserole recipes to this section on the board and will be placing them in this sub category. If anyone else has any chicken or turkey casserole recipes, I would appreciate them being posted here also. Thank you.

Chicken Tetrazzini
1 (8 ounce) package spaghetti, broken into pieces 1/4 cup butter 1/4 cup all-purpose flour 3/4 teaspoon salt 1/4 teaspoon ground black pepper 1 cup chicken broth 1 cup heavy cream 2 tablespoons sherry 1 (4.5 ounce) can sliced mushrooms, drained 2 cups chopped cooked chicken 1/2 cup grated Parmesan cheese
1 Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish. 2 Bring a large pot of lightly salted water to a boil. Add spaghetti, and cook for 8 to 10 minutes, or until al dente; drain. 3 Meanwhile, in a large saucepan, melt butter over low heat. Stir in flour, salt, and pepper. Cook, stirring, until smooth. Remove from heat, and gradually stir in chicken broth and cream. 4 Return to heat, and bring to a low boil for 1 minute, stirring constantly. Add sherry, then stir in cooked spaghetti, mushrooms, and chicken. Pour mixture into the prepared baking dish, and top with Parmesan cheese. 5 Bake 30 minutes in the preheated oven, until bubbly and lightly browned. Makes 4 servings

Heat first 3 ingredients and put into pie plate, cover with biscuits. Bake at 375 degrees until biscuit is cooked, about 20 minutes.

Turkey Casserole
1 sm. can asparagus, drained 2 cups turkey, cubed 1 can cream of chicken soup 3 slices American cheese Buttered cracker crumbs Worcestershire, salt, pepper to taste
Place turkey in a flat 7x12" casserole dish. Mix the soup with the Worcestershire, salt and pepper. Add asparagus, cheese slices and seasoned soup the the casserole dish. Cover with crumbs and bake 350 degrees until bubbly. Serves 6 to 8.

Turkey and Rice
1 1/2 c. white rice 1/2 c. chopped green onions 1/2 can beef consomme 1 c. sliced mushrooms 1 1/2 to 2 c. cut-up turkey 1/4 c. butter or salad oil 1 green pepper, sliced 1 c. water
Saute onion in small amount of butter until golden brown, then set aside. In same pan, using a small amount of butter, brown the rice. Pan and oil must be very hot before putting rice in pan. Then you must stir constantly until rice becomes a golden brown. Then place rice in casserole or baking dish. Add sauteed onion, turkey, consomme and water. Cover and cook in 350 degree oven for about 1 hour or until liquid has been absorbed by the rice. About 15 minutes before it is done, add the green pepper and about 5 minutes before serving, add mushrooms.

Chicken'n Green Bean Casserole
4 1/2 c. cooked rice (1 1/2 c. uncooked) 1 tbsp. parsley flakes 1 1/2 c. cubed cooked chicken, about 8 oz. 2 (1 lb. each) cans cut green beans, drained 3/4 c. milk 1 can condensed cream of mushroom soup 1/8 tsp. ground black pepper 1 (2.8 oz.) can Durkee French fried onions
Combine cooked rice and parsley in 8 x 12 inch baking dish. With spoon, press rice up sides and over bottom to form crust. Combine chicken, beans, milk, soup, pepper and 1/2 can French fried onions; spoon into rice crust. Bake, covered, at 350 degrees for 35-40 minutes. Top with remaining onions and bake uncovered 5 minutes longer. 6 servings.

Green Bean, Chicken + Mushroom Casserole
8 oz. boiled fillet chicken 1/4 c. green pepper, diced 1 c. green beans 1/2 c. fresh or canned mushrooms 1/4 c. onions, diced 1/2 c. tomato soup 4 oz. low-fat Mozzarella cheese 1/2 c. chicken soup, cream Garlic and oregano to taste
Preheat oven to 325. Lightly grease a 2 quart casserole dish. Cut chicken into strips and saute in a frying pan along with the green pepper, onions and mushrooms. Pour tomato soup over chicken and let simmer. Spread green beans into the dish and pour chicken mixture over the green beans. Sprinkle cheese over the mixture. Bake 35 to 40 minutes or until cheese is golden brown.

Chicken Almond Casserole
1 c. chicken breast, diced and cooked 1 can cream of chicken soup 1 c. sliced almonds 1/2 c. mayonnaise 1 c. celery, chopped 1/2 tsp. salt 1/2 tsp. pepper 1 tsp. lemon juice 3 eggs, hard-boiled 1 c. cracker crumbs (I use Zesta) 2 1/2 tsp. butter
Preheat oven to 400. Grease a deep casserole dish. Mix together cracker crumbs and butter; set aside. Combine chicken, chicken soup, almonds, mayonnaise, celery, salt, pepper, eggs and lemon juice. Pour layers of the chicken mixture alternately with 3/4 cup of buttered cracker crumbs. Bake for 20 to 30 minutes or until bubbly. Cover with any remaining buttered crumbs and brown. Serves 6.

Chicken + Stuffing Casserole
2 c. chicken, cooked and cut into small pieces 1/4 lb. egg noodles, cooked al dente to pkg. directions 1 10 3/4oz. can cream of chicken soup 4 c. Stove Top Stuffing mix 1/2 c. butter, melted, (1 stick) 1/2 c. milk
Preheat oven to 350. Butter a1 1/2 quart casserole dish. Pour noodles into casserole dish. Mix the cooked chicken and chicken soup together and pour over the noodles. Mix butter with stuffing mix and put on top of soup mixture. Pour milk over the top of casserole. Bake for 25 minutes. Serves 4 to 6.

Chicken + Asparagus Casserole #1
2 10 3/4oz. cans cream of chicken soup 1 c. Hellmann's mayonnaise1 10oz. box Wheat Thins, crushed 2 c. chicken, cooked and diced 1 15 oz. can cut asparagus spears 1 8oz. can water chestnuts, sliced 1 c. cheddar cheese, grated 1/2 c. butter or margarine, (1 stick)
Preheat oven to 350. Grease a 9x13" baking dish. Combine soup and mayonnaise. Set aside. Place 1/2 of crushed Wheat Thins in the bottom of the baking dish. Pour 1/2 of the soup and mayonnaise mixture over that and spread. Then the asparagus, mushrooms, diced chicken, water chestnuts and cheddar cheese. Top with remaining soup and mayonnaise mixture. Melt butter and combine with remaining Wheat Thins and sprinkle evenly over casserole. Bake for 35 to 40 minutes, or until hot and bubbly around the edges.

Chunky Chicken + Cheese Casserole
2 10 3/4oz. cans cream of chicken soup 1 c. mayonnaise 2 tbsp. lemon juice 2 14 1/2oz. cans green beans, drained 4 chicken breasts, cooked and cut up in chunks 1 small can water chestnuts, sliced freshly grated Cheddar cheese
Preheat oven to 350. Coat a 9x13" baking dish with non stick cooking spray. Mix together soup, mayonnaise and lemon juice. Set aside. Layer green beans on the bottom, then chicken, then water chestnuts, then the soup mixture and last the grated cheese. Bake for 45 minutes to 1 hour until mixture bubbles.

Chicken + Sausage + Rice Casserole
1/2 c. wild rice, uncooked 1 c. long grain rice, uncooked 2 c. chicken, cooked and diced 1 lb. mild pork sausage 2 10 3/4oz. cans cream of chicken soup 2 10 3/4oz. cans cream of mushroom soup, ...(may use all cream of chicken if desired) 1 tbsp. worcestershire sauce 1/3 c. port wine 2 - 3 tbsp. butter or margarine 2 - 3 c. chicken broth 1 c. celery, thinly sliced 2 cloves garlic, finely minced 1/2 c. minced onion 1/2 lb. fresh mushrooms, sliced (canned ones can be used if drained) 3 bunches green olives, sliced
Cook the long grain rice according to package directions. Cook the wild rice about 45 minutes after washing it well. Drain both rices and mix together. Cook sausage in frying pan until done; drain grease. Preheat oven to 350. Coat a large casserole dish with non stick cooking spray. Combine both soups together. Then add chicken broth until you get a medium sauce. Stir the Worcestershire sauce and wine into the soup mixture and set aside. Melt the butter and saute the celery, garlic, onion and mushrooms together in a frying pan until tender crisp. Place the rice mixture in the bottom of the casserole dish. Then layer the chicken, then the sausage, then the vegetables and cover with the soup mixture. Top with homemade bread croutons (below). Bake for about 45 minutes or until croutons are lightly tanned and casserole is bubbling around the edges.
Homemade Bread Croutons
1/2 c. butter or margarine, (1 stick) 3 slices of bread, cut into small squares
Melt the butter or margarine in a saucepan. Add the bread pieces. Stir together and mix until all pieces are moist with butter. Spread the croutons over the casserole and bake. (They are worth the added effort.)

Easy Chicken Casserole
2 large uncooked chicken breasts 1 tbsp. butter or margarine 1 10 3/4oz. can cream of chicken soup 3/4 c. sauterne wine 1 5oz. can water chestnuts, sliced 1 3oz. can mushrooms, 1/4 c. green pepper, chopped
Preheat oven to 350. Coat a 2 quart baking dish with non stick cooking spray. Fry chicken in butter until golden brown. Remove to baking dish. Combine rest of ingredients and heat in a saucepan for 5 minutes over low heat. Pour sauce over chicken and cover with foil. Bake for 25 minutes. Uncover and continue cooking for another 25 minutes.

Chicken + Broccoli Casserole
1 10 3/4oz. can cream of chicken soup 1 10 3/4oz. can cream of celery soup 1 c. mayonnaise or milk 1 tsp. lemon juice 1 20oz. bag frozen broccoli cuts, thawed and drained 8 c. cooked chicken, cut in small pieces, (3 lbs.) 1 c. shredded Cheddar cheese, (4 oz.) 1 2.8oz. can French fried onions
Preheat oven to 350. Lightly grease two 2 quart shallow baking dishes. Whisk undiluted soups, mayonnaise and lemon juice in bowl until well blended. Place half broccoli in bottom of each baking dish. Top with half the chicken. Pour soup mixture over each and spread to cover. Sprinkle each with cheese. Bake for 25 - 30 minutes until lightly browned. Scatter onions over tops and bake 5 - 7 minutes more.
To freeze: Let cool, wrap tightly in foil and freeze up to 3 months. To reheat frozen: Bake wrapped casserole 1 1/2 hours at 350 degrees. Unwrap and bake 10 minutes longer.

Chicken Divan Casserole
4 chicken breasts, boiled & deboned & broken into lg. pieces 1 lg. bunch broccoli, cooked 1 tbsp. lemon juice 1/4 tsp. curry 1 c. mayonnaise 1 can cream of celery soup 1 pkg. shredded Cheddar cheese
Preheat oven to 350. Grease a casserole dish. Layer chicken pieces on bottom of casserole dish. Then layer the broccoli. Mix lemon juice, curry, mayonnaise and soup together and pour on top of chicken and broccoli. Sprinkle with shredded Cheddar cheese. Bake for approximately 20 - 30 minutes.

Chicken Mac + Cheese Casserole
1 pkg. uncooked creamette macaroni (7 oz.) 1 10 3/4 oz. can cream of chicken soup 1 10 3/4oz.can cream of celery soup 1/2 lb. grated Velveeta cheese 1 15oz. can water chestnuts 2 c. diced cooked chicken* 1/4 c. diced green pepper 1 2oz. jar diced pimentos 1 small can mushroom pieces 1 1/2 c. milk 1 tsp. salt
Mix all ingredients together in a large bowl. Cover to seal. Then let refrigerate overnight. Preheat oven to 350. Butter a 9x13" glass casserole. Pour the refrigerated mixings into the casserole. Bake for 1 1/4 hours. *Tuna, shrimp or crab meat may be substituted for chicken.

Crunchy Chicken Salad Casserole
2 c. chopped cooked chicken 1 c. chopped celery 1 10 3/4oz. can cream of chicken soup 3/4 c. mayonnaise 1 c. sliced diced water chestnuts 1/2 c. slivered almonds 4 tbsp. butter 1 c. crushed corn flakes
Preheat oven to 350. Lightly coat a 13x9x2" casserole dish. Mix the chicken, celery, soup, mayonnaise, chestnuts, and almonds together. Pour in the casserole dish. Melt butter and mix with corn flakes. Sprinkle over top of the casserole. (This should be put on just before baking.) Bake for 45 minutes. Eat immediately.

Sour Cream Chicken Casserole
3 c. cooked, diced chicken 1 (8 oz.) bag noodles, cooked al dente to pkg. directions, drained 1 sm. can mushrooms 2 cans cream of chicken soup 1 (16 oz.) sour cream 8 oz. Swiss cheese
Preheat oven to 350. Lightly grease a 9x13" casserole dish. Combine the chicken, noodles, mushrooms, soup and sour cream together. Pour into the casserole dish. Sprinkle with the cheese. Bake for 45 minutes.

Chicken Ziti Casserole #1
1 28oz. container spaghetti sauce, (any variety, but a nice garlic and onion blend would work well) 6oz. uncooked ziti noodles, cooked al dente to pkg. directions, (4 c. cooked) 1 1/2 c. cubed cooked chicken 1 c. shredded Mozzarella cheese 1 tbsp. grated Parmesan cheese
Preheat oven to 350. Lightly grease a 2 quart casserole dish. Stir together spaghetti sauce, cooked ziti, chicken, and 1/2 of the Mozzarella cheese. Pour into the casserole dish. Sprinkle with rest of Mozzarella and and then the Parmesan cheese. Bake for 30 minutes or until hot and bubbling. Makes 6 servings. - - - - - - - - - -
Ziti Chicken Casserole #2
2 cups uncooked ziti pasta 2 5-oz. cans chunk chicken, drained 2 cup shredded Cheddar cheese 1 10-oz. can condensed cream of chicken soup 1 soup can water 1/4 cup grated Parmesan cheese
Cook ziti as directed on package and drain well. Combine all ingredients except Parmesan cheese and spoon into a greased 2-quart casserole dish. Top with Parmesan cheese. Bake at 350 degrees for 30-35 minutes or until hot and bubbly. Serves 6

Southern Chicken Casserole
2 1/2 - 3lb. frying chicken, cut up 1/2 lb. bacon 4 med. potatoes, each cut lengthwise into 3 1 lg. onion, thinly sliced 1 tsp. poultry seasoning 1 tsp. salt 1/2 tsp. black pepper 1/2 c. chopped shallots, green onions or sliced onions 2 tbsp. chopped fresh parsley
Preheat oven to 350. Lighlty coat a 2 quart casserole dish with non stick cooking spray. Wash and dry chicken. In Dutch oven type pot, fry bacon until crisp. Remove bacon and set aside. Add chicken, browning well on all sides; then remove to casserole dish as pieces brown. Place potatoes in the pot and brown on both sides, then remove and place on top of chicken. Top potatoes with the onions. Mix together in a small bowl, poultry seasoning, salt, pepper, shallots and parsley and sprinkle over the onions. Crumble bacon over the top. Cover and bake for 40 minutes.
You may add 2 cups green beans, broccoli, cauliflower or squash. Layer extra vegetables on top of the chicken before adding the potatoes and onions.

Apple Chicken Casserole
3 unpeeled tart apples, cubed 2 chicken breasts, skinned 2 tbsp. orange juice 2 tbsp. honey 2 orange slices
Preheat oven to 350. Coat a casserole dish with non stick cooking spray. Place the apples in the bottom of the casserole dish. Place the chicken breasts over the apples. Combine orange juice and honey in a cup and spoon 1 tbsp. of the juice mixture over each piece. Cover, and bake for 45 minutes. Uncover and spoon remaining juice mixture over each piece of chicken. Bake another 30 minutes, uncovered. Garnish with orange slices.

Mexican Chicken Casserole
6 chicken breast or 1 whole chicken 1 16oz. can chicken broth milk 10 oz. Velveeta cheese 1 10 3/4oz. can cream of chicken soup 1 16oz. can Rotel tomatoes 1 bag Doritos
Preheat oven to 350. Need a 2 1/2 - 3 quart oblong casserole dish. Cook chicken in the broth. Drain and save broth. Let cool, debone and chop. Combine the remaining broth with the milk to measure 1 cup. Mix with Velveeta, soup and tomatoes in a saucepan and bring to a boil. Add meat and simmer 5 - 10 minutes, stirring often. Place a layer of the chips in the bottom of the casserole dish, then layer meat mixture. Add layer of chips, layer of meat mixture, ending with chips on top. Bake for 30 minutes.

Swiss Chicken Casserole
4 - 6 chicken breasts 6 slices Swiss cheese 1 10 3/4oz. can cream of mushroom soup 1/4 c. milk 2 c. herb seasoning stuffing mix 1/4 c. butter or margarine
Preheat oven to 350. Lightly grease a casserole dish. Place chicken in casserole. Place cheese on top of chicken. Mix soup and milk and pour over chicken. Cover the mixture with stuffing mix. Drizzle butter over crumbs. Cover and bake for 50 minutes.

Creamy Italian Chicken + Rice Casserole
1 c. uncooked rice salt and pepper to taste 1 10 3/4oz. can cream of chicken soup* 1 single packet dry Good Season Italian dressing mix 2 c. boiling water 2 1/2 - 3 lb. chicken breasts or cut up
Preheat oven to 350. Coat 9x13" or 3 quart baking dish with non stick cooking spray. Wash and drain rice; then spread in baking dish. Sprinkle with salt and pepper. Mix soup, dressing mix and water together. Stir into casserole. Lay chicken, skin side up, on top. Cover tightly with foil and bake cook for 1 hour. Uncover and cook for 20 minutes longer to dry rice. Put casserole under broiler for a few seconds to brown chicken. Serves 6 - 8.
*May substitute cream of mushroom soup for the chicken.

Californica Hot Chicken Salad Casserole
3 c. cubed, cooked chicken or turkey 1 10 3/4oz. can cream of chicken soup 1 c. chopped onion 1/2 c. sliced water chestnuts 1/2 c. mayonnaise 2 tbsp. lemon juice 1/2 c. slivered almonds 3/4 c. crushed potato chips 3/4 c. crushed corn flakes
Mix the cubed chicken, the soup, onion, water chestnuts, mayonnaise and lemon juice together and spread in a 9x9x2" casserole dish. Combine almonds, potato chips and corn flakes together and sprinkle on top of the chicken mixture. Bake at 350 degrees for 30 minutes.

One Dish Chicken Dinner
4 skinless chicken breast halves 4 med. potatoes, peeled and sliced 1/4" thick 2 large carrots, 1/4'd lengthwise then cut into 2" lengths 1/2 lb. green beans or 1 10oz. pkg. frozen green beans 1 large onion, quartered 1 tbsp. dried parsley 1 tsp. ground cumin salt and pepper to taste 1/2 c. dry sherry
Preheat oven to 300. Put chicken in large ovenware pot. Place potatoes on top of chicken. Add carrots and green beans. Mix parsley, ground cumin, salt and pepper together. Sprinkle on top of green beans. Pour sherry over and cover tightly. Bake for 2 hours. Makes 4 servings.

Chicken + Dumplings Casserole
1/4 c. butter 1/2 c. chopped onions 1/2 c. chopped celery 2 cloves garlic, minced 1/2 c. flour 2 tsp. sugar 1 tsp. salt 1 tsp. dry basil 1/2 tsp. pepper 4 c. chicken broth 1 10oz. pkg. frozen peas 4 c. cooked chicken, cubed
dumplings: 2 c. buttermilk biscuit mix 2 tsp. dried basil 2/3 c. milk
Preheat oven to 350. Lightly grease 13x9x2" baking dish. In a large kettle melt butter and saute onions, celery, and garlic until tender. Add flour, sugar, salt, basil, pepper and chicken broth. Bring to a boil. Boil a minute then add chicken and frozen peas. Pour into previously prepared pan. For dumplings combine biscuit mix, basil and milk. Stir until moistened and use spoon to drop dumplings onto casserole (12 dumplings) Bake uncovered for 30 min. Cover and bake 10 min more or until dumplings are done. Makes 6 servings.
